Duck Sausage Shakshuka

Ingredients

  • A pack of sundried tomatoes and garlic duck sausages (300 g)
  • 1 onion
  • 1 red pepper
  • 3 garlic cloves
  • 1 handful flat parsley
  • 1 can of diced tomatoes (796 ml)
  • 1 can of white beans (540 ml)
  • 2 tablespoons of tomatoe paste
  • 1 teaspoon of cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of paprika
  • A sprinkle of Espelette pepper
  • 1 tablespoon of olive oil
  • 1/2 cup of water
  • Salt and pepper
  • 4 eggs
  • 100 g of feta cheese
  • Toasted bread

Preparation

  1. Preheat oven to 375 degrees Fahrenheit.

  2. Precook duck sausages on a baking pan for 15 minutes. Set aside for later use.

  3. Brown the onions, then add the chopped peppers in the olive oil. Cook for 3 to 5 minutes.

  4. Add chopped garlic, tomato paste and spices. Cook for 2 minutes.

  5. Add diced tomatoes and beans. Add water. Leave to gently simmer for 10-15 minutes. Season with salt and pepper.

  6. Slice the sausages and add to the mixture.

  7. Make small hollows in the mixture, then add the 4 eggs.

  8. Place in the oven for 10-15 minutes, or until the eggs are cooked.

  9. Just before serving, add the seeded feta and chopped parsley. Serve with toasted bread.
