Peking Duck Noodles

Duck noodles peking style

Ingredients

    For the noodles
  • 1 Brome Lake Ducks Peking-style confit and fully cooked half-duck (1.25 kg)
  • 1/2 lb (225 g) uncooked Asian-style noodles
  • 2 tablespoons (30 ml) olive oil
  • 1 onion, sliced
  • 1 red bell pepper, diced
  • 10 to 12 sugar snap peas, cut in half
  • 1/4 cup (60 ml) green onions, thinly sliced
  • 2 tablespoons (30 ml) roasted sesame seeds
  • For the sauce
  • 1/4 cup (60 ml) chicken broth
  • 3 tablespoons (45 ml) low-sodium soy sauce
  • 3 tablespoons (45 ml) maple syrup
  • 2 tablespoons (30 ml) hoisin sauce
  • 2 tablespoons (30 ml) rice wine vinegar
  • 1 tablespoon (15 ml) corn starch
  • 1 teaspoon (5 ml) sesame oil
  • 1 teaspoon (5 ml) garlic, chopped
  • 1 teaspoon (5 ml) ginger, chopped

Preparation

  1. Preheat oven to 350 °F (180 °C).

  2. Place the half-duck in a baking dish, cut side down. Cover with aluminum foil. Bake for 30 minutes.

  3. Remove aluminum foil and continue cooking for 5 to 10 minutes, basting the duck with cooking juices a few times. Remove from oven and let sit for 5 minutes before shredding the meat.

  4. Put the meat back into the dish and stir to cover it with cooking juices. Set aside.

  5. Combine sauce ingredients in a small saucepan. Bring to a boil while whisking, then simmer for 2 to 3 minutes over low heat. Remove from heat and keep warm.

  6. In a pot filled with salted boiling water, cook noodles according to package instructions. Drain.

  7. In the same pot, heat olive oil over medium heat. Cook onion and bell pepper for 3 to 4 minutes.

  8. Add sugar snap peas and continue cooking for 4 to 5 minutes.

  9. Add noodles back into the pot, then add shredded duck and sauce. Stir.

  10. Sprinkle with green onions and sesame seeds before serving.
