Duck bacon bites two ways

Ingredients

  • 2 packages of fully cooked Brome Lake Ducks duck bacon, 175 g each, finely chopped
  • For the cheese bites:
  • 1 1/2 packages of 250 g cream cheese, softened
  • 250 ml (1 cup) Monterey Jack cheese, shredded
  • 15 ml (1 tbsp) fresh parsley, finely chopped
  • 5 ml (1 tsp) garlic, minced
  • Salt and pepper to taste
  • 18 pretzel sticks
  • For the jalapeno poppers:
  • 8 jalapenos
  • 180 ml (3/4 cup) cream cheese, softened
  • 180 ml (3/4 cup) smoked gouda, shredded
  • 80 ml (1/3 cup) green onions, chopped

Preparation

  2. Heat a large skillet over medium heat. Cook the duck bacon for 5 to 7 minutes until golden and crispy. Drain and place on paper towels. Let cool.

  3. For the cheese bites: In a bowl, mix the cream cheese with the Monterey Jack, parsley, and garlic. Season with salt and pepper. Refrigerate for 1 hour.

  4. Shape the mixture into 18 balls.

  5. In another bowl, place half of the chopped duck bacon. Roll the cheese balls in the bacon bits to coat and insert a pretzel stick into each ball. Refrigerate until ready to serve.

  6. For the jalapeno poppers: Preheat the oven to 205°C (400°F).

  7. Cut the jalapenos in half lengthwise and remove the white membrane and seeds.

  8. In a bowl, mix the cream cheese with the smoked gouda and green onions.

  9. Stuff the jalapeno halves with the mixture and place them on a baking sheet lined with parchment paper.

  10. Bake for 25 to 30 minutes.

  11. Switch oven to broil and continue cooking for 2 to 3 minutes until the cheese is golden.

  12. When serving, garnish with the remaining duck bacon.
