1. Heat a skillet on medium low heat; add the onion, butter and olive oil and cook for 30 minutes, covered.
2. Add the maple syrup and balsamic vinegar and keep covered in the skillet for 15 minutes over medium low heat, until the maple syrup and vinegar have been fully absorbed by the onions.
1. Once the onions are ready, preheat the oven to 400°F.
2. Heat the duck meat in a skillet.
3. Top the pizzas with the caramelized onions, duck meat and low-fat cheese.
4. Bake in the oven for 10 to 15 minutes.
5. Before serving, top the pizzas with the feta cheese, balsamic reduction and arugula sprouts.
