Duck and caramelized onion pizza

Ingrédients

    For the caramelized onions
  • 2 large Spanish onions, minced
  • 30 ml (2 tbsp) butter
  • 15 ml (1 tbsp) olive oil
  • 60 ml (¼ cup) maple syrup
  • 15 ml (1 tbsp) balsamic vinegar
  • 2 ml (½ tsp) pepper
  • 1 ml (¼ tsp) salt
  • For the pizza:
  • 3 Naan breads (18cm)
  • 1 package Brome Lake shredded duck confit
  • 125 ml (½ cup) grated low-fat cheese (60g)
  • 60 ml (1/4 cup) crumbled feta cheese (30g
  • Balsamic reduction for each pizza
  • Arugula sprouts to taste

Préparation

    To make the caramelized onions:
  1. 1. Heat a skillet on medium low heat; add the onion, butter and olive oil and cook for 30 minutes, covered.

  2. 2. Add the maple syrup and balsamic vinegar and keep covered in the skillet for 15 minutes over medium low heat, until the maple syrup and vinegar have been fully absorbed by the onions.

  3. To make the pizza:
  4. 1. Once the onions are ready, preheat the oven to 400°F.

  5. 2. Heat the duck meat in a skillet.

  6. 3. Top the pizzas with the caramelized onions, duck meat and low-fat cheese.

  7. 4. Bake in the oven for 10 to 15 minutes.

  8. 5. Before serving, top the pizzas with the feta cheese, balsamic reduction and arugula sprouts.
