Sweet and Sour Duck Cheesecake

Ingredients

  • 2 packages shredded duck
  • 125 ml (½ cup) honey and a little to garnish
  • 1 box (225 g) crackers of your choice
  • 125 ml (½ cup) melted butter
  • 400g ricotta cheese
  • 1 brick (250 g) cream cheese
  • Juice and zest of half a lemon
  • Approx. 125 ml (½ cup) chopped fresh herbs of your choice (chives, dill, parsley, thyme, oregano, rosemary). Save a few sprigs for plating.
  • Salt and pepper

Preparation

  1. Using a food processor, coarsely chop the crackers and blend in the butter.

  2. In a blender, combine both cheeses with lemon, herbs, salt and pepper.

  3. Using muffin tins or a pie dish, press the cracker mixture into the bottom of the tins or dish, then add the cheese mixture.

  4. Refrigerate for at least 5 hours or freeze for at least 2 hours.

  5. Reheat the duck for a few minutes in the microwave and mix with the honey.

  6. Remove the crusts from the muffin tins or pie dish, garnish with duck meat, herbs and drizzle with honey.
