Piri Piri Duck Burgers with Grilled Peppers, Chive Mayonnaise and Horseradish

Ingredients

    For the burger
  • 1 red bell pepper, trimmed and halved
  • 1 yellow bell pepper, trimmed and halved
  • Olive oil
  • Salt and pepper
  • 2 packs of Brome Lake Duck Piri Piri duck burgers
  • 4 hamburger buns of your choice
  • 4 lettuce leaves
  • For the mayonnaise
  • 125 ml (1/2 cup) mayonnaise
  • 30 ml (2 tbsp) finely chopped fresh chives
  • 15 ml (1 tbsp) prepared horseradish
  • 10 ml (1 tsp) Dijon mustard
  • Sea salt and ground black pepper

Preparation

    For the burger
  1. Preheat the barbecue to medium heat. Once hot, clean the grill and set aside.

  2. Brush the pepper pieces with olive oil and season with salt and pepper to taste. Place them on the barbecue grill.

  3. Place the duck patties (still frozen) on the barbecue grill and cook for 5 to 7 minutes on each side or until the duck patties reach an internal temperature of 74°C (165°F) in the center.

  4. Place the buns on the grill at the end of cooking.

  5. Brush buns with chive-horseradish mayonnaise and garnish with lettuce leaves. Top with the Piri Piri duck patties and garnish with sliced grilled peppers.

  6. Cover buns and serve immediately with potato chips and garlic dill pickles.

  7. For the mayonnaise
  8. Put all the ingredients in a bowl and season with salt and pepper to taste. Whisk well and store in the fridge.
