Orchard duck confit lettuce wrap

Ingredients

  • 500 g (1 lb.) duck meat confit
  • 120 ml (½ cup) minced mild onions
  • 30 ml (2 tbsp.) finely chopped fresh garlic
  • 30 ml (2 tbsp.) Carminée du Verger du Clocher
  • 10 ml (2 tsp.) minced fresh ginger
  • 25 ml (1/2 tsp.) Peau Rouge (smoked chipotle)
  • 12 lettuce leaves (Boston, Romaine, Iceberg or other)
  • 1 can water chestnuts, finely chopped
  • 3 green onions, slivered

Preparation

  1. Chop duck confit. Add onions, garlic, Carminée, ginger and Peau Rouge. Mix well. Serve on lettuce accompanied with water chestnuts and green onions.
