In a bowl, mix mayonnaise with paprika and maple syrup. Set aside.
In a pan, heat half of the olive oil over medium heat. Cook the duck breast steaks according to packaging instructions. Place steaks on a plate. Cover loosely with aluminum foil, then set aside for 5 minutes before cutting.
Meanwhile, heat the remaining olive oil in another pan over medium heat. Cook mushrooms for 4 to 5 minutes.
Add peppers, onion and garlic. Continue cooking for 4 to 5 minutes. Remove from heat.
Cut the baguette into four equal pieces, then cut each piece in half lengthwise.
Spread the seasoned mayonnaise onto each baguette piece. Top with duck slices, vegetables, and cheddar cheese.
Set oven to broil.
Place loaded bread pieces on a baking sheet. Broil for 2 to 3 minutes, until cheese is melted.
