Spicy duck wings

Ingredients

  • 1 bag of duck wings (30)
  • For the marinade:
  • 120 ml (1/2 cup) ketchup
  • 60 ml (1/4 cup) brown sugar
  • 30 ml (2 tbsp) Tabasco sauce
  • 45 ml (3 tbsp) olive oil
  • 7.5 ml (1½ tsp) Cayenne pepper
  • 2 cloves garlic, finely chopped
  • For the sauce:
  • 250 ml (1 cup) hot sauce (Frank’s Red Hot)
  • 30 ml (2 tsp) butter
  • 30 ml (2 tbsp) maple vinegar
  • Salt and pepper

Preparation

    For the marinade:
  1. Combine all marinade ingredients in a bowl. Add wings and coat with marinade. Cover and refrigerate for 2 hours or overnight.

  2. Preheat oven to 180° C (350° F).

  3. Place wings side by side in a roasting pan, cover with marinade and bake on the middle rack of the oven for about 3 hours, turning over once. Drain

  4. For the sauce:
  5. In a sauce pan, bring sauce ingredients to a boil.

  6. Line a baking sheet with aluminum foil or parchment paper.

  7. Remove wings from the oven, lay side by side on sheet, baste with hot sauce, and broil for 5 minutes or until crispy.

  8. Serve with remaining hot sauce.
