Grilled Duck Tacos with Jalapeño Sauce

  • Portions : 4 to 6

Ingredients

  • 3 duck breasts
  • 2 ears of corn, in their husks
  • About 125 ml (½ cup) of thinly sliced red cabbage
  • One dozen mini wheat tortillas
  • 1 thinly sliced jalapeño (optional)
  • A few cilantro leaves
  • Salt and pepper
  • Jalapeño Sauce:
  • 250 ml (1 cup) sour cream
  • 1-2 jalapeño peppers, coarsely chopped
  • ½ bunch cilantro, chopped
  • Salt and pepper

Preparation

  1. Preheat the BBQ. Generously season the duck breasts with salt and pepper.

  2. Cook the corn on the BBQ in their husks for about 30 minutes.

  3. Meanwhile, place the duck breasts on the BBQ grill over indirect heat. Cook for about 10 minutes on each side, then sear over high heat. Remove from the heat and let rest for at least 10 minutes before slicing.

  4. Mix all the sauce ingredients and blend with an immersion blender. Adjust seasoning.

  5. Warm the tortillas on the BBQ.

  6. Slice the duck breasts into bite-sized pieces.

  7. Shuck the corn and cut kernels off the cob.

  8. Assemble the tacos with sauce, cabbage, duck, corn kernels, cilantro, and a slice of jalapeño.
