Smoked Whole Duck Glazed with Bourbon and Maple

Ingredients

  • 1 whole thawed duck
  • 1 drizzle of oil
  • 125 ml (½ cup) of maple BBQ spices (your favorite blend)
  • 125 ml (½ cup) of Bourbon
  • 125 ml (½ cup) of maple syrup
  • 5 ml (1 tsp) of salt

Preparation

  1. Preheat the smoker to 275°F.

  2. Trim the duck by removing excess skin, fat, and the neck from the inside (if applicable).

  3. Pat dry thoroughly and coat with a drizzle of oil and the maple BBQ spices.

  4. Smoke for 30 minutes.

  5. Mix the bourbon, maple syrup, and salt.

  6. Baste every 20 minutes until the internal temperature reaches 168°F (76°C).

  7. Remove from the smoker and let rest for 10 minutes before slicing.
