Spicy BBQ duck drumettes

Ingrédients

  • 30 Brome Lake Duck drumettes (1 bag)
  • Marinade:
  • 15 ml duck fat or butter
  • 15 ml olive oil
  • 4-5 garlic cloves, chopped
  • 1 French shallot, chopped
  • 4 cm (1½ in.) piece of fresh gingerroot, chopped
  • 1 bottle of Diana’s Spicy BBQ sauce

Préparation

  1. Preheat the oven to 165°C (325°F).

  2. In a large saucepan, boil the drumettes in water for 30 minutes to remove some of the fat and tenderize the meat. Remove drumettes from the water.

  3. In a medium saucepan, melt the duck fat and olive oil over medium heat. Add the garlic, shallots and ginger. Cook for 2-3 minutes without allowing to brown. Add the spicy Diana’s BBQ sauce. Bring to a boil. Remove from heat and add the drumettes. Cover and marinate for 1-2 hours in the refrigerator.

  4. Bake, covered, in the oven for 1:45 to 2:00 hours or until the meat falls off the bone.

  5. Place the drumettes on the bottom rack of the oven and finish cooking uncovered under the broiler for 3-5 minutes, to make the skin crispy.

  6. Transfer drumettes to a platter and spoon hot marinade on top.

Trucs et astuces

The amount of garlic, shallots and ginger can be adjusted to your taste. If you love any of these three ingredients, don’t be afraid to use a little more. Likewise, don’t hesitate to reduce the quantity of one of the ingredients you may not like as much.
