White beans and cherry tomatoes en papillote

- 500 ml (2 cups) yellow and red cherry tomatoes
- 1 French shallot, finely chopped
- 1 clove garlic, minced
- 30 ml (2 tbsp) olive oil
- 1 can (450 ml or 19 oz) white beans, rinsed and drained
- Salt and pepper
Preheat the grill on high.
Overlap two large aluminum foil sheets. Place the tomatoes, shallots and garlic in the centre. Sprinkle with olive oil. Cover with white bean, salt and pepper. Close the foil pack tightly and place on the BBQ grill. Close the lid and cook for 15 minutes or until tomatoes have burst.
Remove from grill. Open the foil pack and gently mix.
This side dish is delicious when served with Brome Lake’s duck tournedos with olives and duck sausage sauce.
