Ingredients

Duck breast, salt, sugar, sodium erythorbate, spices, sodium nitrite

(Naturally maple wood smoked)

Preparation

As an appetizer (finely sliced dried breast)

  • Brush dried duck breast with whole grain mustard and wrap around cooked asparagus tips,
  • Spread fresh goat cheese, finely chopped sun-dried tomatoes and a slice of dried duck breast over a crostini or toast.
  • Wrap slices of dried duck breast around a few leaves of fine lettuce and add a few drops of extra virgin olive oil and fresh ground pepper.
  • Wrap cubes of avocado, cantaloupe, pineapple or fresh figs with slices of dried duck breast, and spear with a toothpick.

As a first course or main dish (strips of dried duck breast)

  • Add dried duck breast as a garnish to an arugula, Caesar or mesclun salad with raspberry vinaigrette.
  • Add strips of dried duck breast to a classic tomato, bocconcini and fresh basil salad.
  • Add dried duck breast to pesto or carbonara pasta or to a pasta salad with fresh rosemary, garlic and feta.
  • Add dried duck breast to an omelette or frittata with fresh thyme and Gruyère.
  • Use dried duck breast as a topping on mini pizzas along with herbs, black olives and fresh Parmesan.
