Ingredients

Boneless duck  breasts, brine  (water, salt, dextrose, sodium  phosphate, sodium erythorbate)

Preparation

For best cooking results, take the roast out of the refrigerator about 15 minutes before cooking.

Our roast is made from tender duck breasts only and is carefully trussed and tied. Cooked as is or seasoned to taste, the duck’s natural flavour comes through.

Cooking

Cook our duck roast just as you would cook a beef or veal roast. Duck roast is best served pink.

Oven

Cooking: 55 minutes

  • Pre-heat oven to 190 °C (375 °F).
  • Pan-sear duck roast on all sides.
  • Cook in the oven in a roasting pan for about 45 min. or until internal temperature reaches 63 °C (145 °F).
  • For maximum tenderness, tent the roast in aluminum foil and let stand for 10 minutes before removing netting; slice and serve.
