BBQ hickory boneless, skin-on duck split breast

A refined taste that is quite different from an ordinary barbecue. Prepare it whole, sliced, rolled or in strips: this duck breast is the quintessential versatile product!


Duck breast, water, dehydrated vegetables (tomato, garlic, onion), sea salt, brown sugar, vegetable oil (canola), sugar, spices (mustard), yeast extract, molasses powder, guar gum, xanthan gum, Worcestershire sauce powder (maltodextrin, distilled vinegar, molasses, corn syrup, salt, caramel color, garlic powder, sugar, spices, tamarind, natural flavour), smoke flavour, apple cider vinegar powder, dehydrated lemon juice powder, vinegar powder


Remove from refrigerator 10 minutes before cooking. Use a sharp knife to cut incisions through the skin but taking care not to cut into the meat. The incisions should be about ¾ in (2cm) apart and in a crosswise pattern. Duck breast is at its best when served pink. Note that marinated meat cooks faster, beware not to overcook. To avoid the meat to dry, do not cut too thinly.


Oven cooking (the recommended method): preheat oven to 400°F (205°C). Place the duck marinated breast skin side down in a hot pan over medium-high heat. Sear for 7- 8 minutes or until the skin color is caramel brown. Turn breast and finish cooking 1 minute on the meat side. For a crispier skin, remove excess fat during cooking. Finish cooking in oven for 6-8 minutes according to taste. Remove breast from pan and let stand 3 to 4 minutes loosely covered with aluminum foil before slicing and serving.


Preheat the barbecue by turning on only one burner at maximum heat. Grill the duck breast on direct heat (open burner side), skin side down, for 1 ½ minutes, turning once. Continue cooking on indirect heat, with closed cover, skin side down, for 8 to 10 minutes. Finish cooking on direct heat with open cover, meat side down, for approximately 2 to 4 minutes. Remove breast from the grill and let rest 3 to 4 minutes loosely covered with aluminum foil before slicing and serving.
